Jackpot Peanut Butter American fudge
Ingredients:
1 cup (240ml) jackpot peanut butter
1 cup (230g) salted butter, cut into pieces
1 teaspoon pure vanilla extract
4 cups (450g) icing sugar, sifted
1/4 teaspoon salt (optional)
1: Line the bottom and sides of a 20cm squared pan with foil or grease proof paper.
2: melt the jackpot peanut butter, salt (if adding) and butter over a Bain Marie until all has melted together.
3: Using a spatular/wooden spoon, stir in the vanilla extract, and powdered sugar.
4: Spread the fudge int the prepared pan and smooth.
5: cover and place in the fridge until firm, (at least two hours).
To serve:
Cut up into what ever size pieces you like.
It can be stored in the fridge for up to about one week.

Lift out with a good portion of jackpot.
